Meet the Farmer

Welcome to our farm.

Farmer: Jay Valencia

My family comes from Northern New Mexico, Santa Fe and Taos where my great grandmother Cassie Aragon was a farmer. I've come full circle now with my return to New Mexico as a student of regenerative and holistic farming practices. Ecology of the land is paramount.


A Closed Loop System

The energy of the land and it's resources stay here. We compost our soil and grow vegetables both perennial and annual along with edible flowers. We heat our filtered water with solar energy. We use biodegradable cleaners and disinfectants for our tools and trays.


As a chef, my added experience in the food & beverage industry brings special value to our relationship. With a background in marketing, filmmaking and commercial media advertising, I bring an extra push to your business as a restaurant or retail grocery store. I love what I do and work symbiotically with your marketing team when possible.

We are not separate businesses, we are connected and we must work together and use all of our assets to find those who are looking for us.


 I've studied regenerative farming and permaculture for almost ten years now and I love talking and sharing about it. The future of our agriculture, our planet and our own microbiome health depends on working within natural systems and not simply taking what we need from them.

Conviviality, The Spirit of Cooking

Conviviality is time shared with friends. Coming together to share a drink and good food. To relax and enjoy your surroundings. 

I love being in the kitchen and don’t even have to be the one cooking. 

I’m just happy to be there. It’s like being backstage at a concert. That vibe where you’re part of the life force creating the event. It’s the reason for being a part of so many different kinds of community events throughout my life. It’s the reason Permaculture means so much to me. 


Food is an exploration into each others lives and cultures. It’s a bridge across otherwise challenging waters and I think it’s exciting to be a new and unfamiliar kitchen. The sharing of ideas and insight.

Cooking Experience

I have been in the kitchen for over forty years starting with my mothers big house parties and a catering company called The Bare Necessities.


You don't need experience as a chef to use microgreens in your cooking. 

I learn new ways every day still. There's no limits, just a desire to use an ingredient that brings a magnitude of health and wellness to your life.
